Green bean casserole from scratch is the ultimate Thanksgiving side dish. Made with mushrooms, butter, fried onions, and a homemade cream sauce.
Serve this along with your Thanksgiving Roast Turkey and Candied Yams!
The great thing about this green bean casserole recipe is that you can make it ahead of time and reheat it up when you want to serve it. I used frozen green beans but feel free to use fresh green beans instead.
Green bean casserole is a dish that consists of green beans, cream of mushroom soup, and french fried onions. Although, I prefer making my own mushroom cream sauce from scratch.
Campbell’s created this dish in 1955 and nowadays it is a staple during the holidays. Classic green bean casserole is just as important as creamy mashed potatoes and sweet potato casserole on Thanksgiving day.

- Green Beans
- Pecans
- French fried onions
- Butter
- Mushrooms
- Yellow onion
- Garlic
- Ground thyme
- Poultry seasoning
- Rubbed sage
- Flour
- Beef broth
- Heavy cream
- Salt and pepper
How to Make Green Bean Casserole from Scratch
Making green bean casserole has never been easier, here’s all you have to do:
- Prep your mushrooms by cleaning them with a damp paper towel and finely chop them.
2. Cook the onions and mushrooms for 5-6 minutes or until the onions soften. Season the mushrooms and onions with salt. Once the onions soften, stir in the fresh garlic, thyme, poultry seasoning, rubbed sage and flour.
3. Cook flour, stirring often about for about 2 minutes. Whisk in the heavy cream and then add the beef broth. Allow the sauce to cook for about 6 minutes or until nicely thickened.
4. Fold in the green beans and mix well.
5. Sprinkle some finely chopped pecans over the top.
6. Add the french fried onions on top and then bake for 25 minutes in a preheated oven at 375 degrees f.
Tips and Recipe Variations:
- Allow green bean casserole to cool for 5-10 minutes before serving.
- Not a fan of pecans? Throw in some crushed walnuts instead.
- Use fresh beans instead of frozen if you prefer.

Green Bean Casserole
Ingredients
- 1/2 cup butter
- 10 ounces mushrooms, finely chopped
- 1/2 cup yellow onion , finely chopped
- 3 garlic cloves, finely minced
- 1/2 tsp ground thyme
- 1 1/2 tsp poultry seasoning
- 1/2 tsp rubbed sage
- 1/2 cup all-purpose flour
- 1 cup beef broth
- 1 cup heavy cream
- salt and pepper to taste
- 12 ounces frozen green beans, thawed
- 1/4 cup pecans, crushed
- 1 cup french fried onions
Instructions
- Preheat oven to 375 degrees F.
- Melt butter in a large pan over medium-high heat.
- Add in mushrooms, onions, and a pinch of salt. Cook until onions soften, about 6-8 minutes.
- Once onions have softened, add in thyme, poultry seasoning, rubbed sage, and flour. Cook flour, stirring often about 2 minutes.
- Slowly start pouring in heavy cream and whisk it in trying to remove any lumps. Continue whisking and begin pouring the beef broth.
- Continue whisking and reduce the heat to medium-low. Allow the sauce to continue cooking and thickening for about 6 minutes or until sauce thickens.
- Remove pan from the heat and fold in the green beans.
- Pour green bean mixture into a well-greased 10x12 baking dish.
- Sprinkle chopped pecans over the casserole and layer french fried onions over the casserole.
- Bake for 25 minutes.
- Allow casserole to cool for 5-10 minutes before serving.
