These air fryer zucchini chips are full of flavor, crispy, and the perfect snack, appetizer, or side dish. Enjoy with spicy aioli, ketchup, or your favorite dipping sauce!
I recently cooked frozen vegetables in the air fryer and they were a hit! So naturally, I went to the grocery store and bought fresh zucchini, eggplant, and cauliflower to try in the air fryer. Glad I did because these zucchini chips were amazing and super easy to make.

Ingredient Notes
Zucchini – Yellow squash works as well. Just make sure to slice the zucchini as evenly as possible for even cooking.
Panko Bread Crumbs – I highly recommend panko for this recipe if you want ultra-crispy zucchini chips.
Parmesan Cheese – Completely optional but it adds flavor. Pecorino romano works too.
Step-By-Step Instructions
- Slice the zucchini into 1/4-inch rings and season with salt and pepper.
- In a dish, combine the panko bread crumbs, garlic powder, onion powder, Italian seasoning, and parmesan cheese. Mix until well combined and set it aside. In a separate dish, whisk 2 eggs.
- Dip the zucchini in the flour, then the eggs, and then the panko bread crumb mixture.
- Spray your air fryer basket with cooking spray. Place the panko-coated zucchini in the air fryer and spray the zucchini with cooking spray.
- Cook at 400 degrees F. for 5 minutes. Once the 5 minutes are up, flip the zucchini, spray with cooking spray and cook for an additional 3 minutes.
Top Tips
- Although I sliced the zucchini chips into 1/4-inch rings, feel free to slice them thinner using a mandoline. The thinner the rings, the crispier they’ll be.
- If you want these spicy, add some cayenne pepper to the panko bread crumb mixture.
Storage and Reheating
These zucchini chips are best enjoyed immediately while the breading is still hot and crispy. However, feel free to refrigerate any leftovers for up to 3 days. To reheat, pop them back in the air fryer for a few minutes.
