Southern-fried corn with bacon is the ultimate side dish recipe. Made with just 5 ingredients in under 30 minutes! You just can’t go wrong when serving a mixture of fresh corn kernels, crispy bacon, and butter.
Whether you’re making Southern fried corn with bacon or creamed corn the choice is yours in terms of fresh corn, frozen corn, or canned. Although I always highly recommend using fresh corn. Turkey bacon is a fine replacement if you don’t eat pork. Make sure to add more oil and butter if omitting the pork bacon.
Bacon releases a lot of grease and in those bacon drippings is where you’ll want to sautee the onions until they are nice and translucent.
Adding a tsp of sugar will sweeten up the corn and help balance the salt from the bacon.
If you’re a fan of soulfood then you will love this recipe. It’s so good.

This is one of the easiest side dishes you’ll ever prepare. Here’s all you have to do:

- Remove the bacon from the skillet and chop it into bite-sized pieces.
- Add the onions to the cast iron skillet and cook for about 2-3 minutes or until translucent.
- Add the corn, butter, sugar, salt, and pepper and let it cook for 10 minutes while stirring occasionally.
- Stir in the crispy bacon, check for seasoning, and enjoy!
How to Pick the Perfect Corn
If using fresh corn, you’ll want to know exactly what to look for. According to this article, you’ll want to check the husk and pay attention to the tassel. Make sure the corn husk is bright green and slightly damp. The tassel should be light brown or gold and a bit sticky.
Fried Corn Tips and Recipe Variations:
- To serve a larger group, double or triple the ingredients and use a 14 1/2 inch cast iron skillet.
- Make sure to leave the bacon grease in the cast iron skillet to saute the onions and fry the corn.
- Add the crispy bacon when the corn is done cooking. Cooking the corn with the bacon will result in soggy bacon.
- Can you freeze fried corn? Absolutely. Allow the fried corn to cool to room temperature and then place it in an airtight container. Freeze up to 2 months.
- Add some red and green bell peppers and saute them along with the onions. Stir in some fresh garlic if you’d like as well.
- Want to make this spicy? Add some jalapenos and a pinch of chili powder.
