These veggie cream cheese roll-ups aka pinwheels contain cream cheese, sour cream, broccoli, and carrots. A quick and easy recipe that comes together in minutes!
If you enjoyed these veggie bars then you will love these veggie roll-ups because they’re so much easier to make. Gameday is fast approaching and although I love buffalo shrimp and honey lemon pepper wings, I always like to have something on hand for my Vegetarian friends.
Fun And Delicious Veggie Roll-Ups
- Requires 7 ingredients.
- No cooking is involved.
- Can be enjoyed cold straight out of the fridge or at room temperature.
- Very delicious and flavorful!
- It can be served as an appetizer, snack, or lunch option.
Ingredient Notes
Tortilla Wraps – I used large flour tortillas but feel free to use low carb or wheat tortillas instead.
Cream Cheese – Softened at room temperature.
Sour Cream – Full-fat.
Chives – Scallions work too!
Broccoli – Avoid frozen broccoli for this recipe, I highly recommend using fresh broccoli.
Carrots – I peeled and shredded two carrots but feel free to use store-bought carrot matchsticks instead.
Step-By-Step Instructions
- Discard the broccoli stem and roughly chop the broccoli florets. Scrub, peel, and grate the carrots using a box grater and set aside.
- In a large bowl, mix the softened cream cheese, sour cream, garlic powder, and chives. Mix well and season with salt and pepper to taste.
- Spread a generous amount of the cream cheese mixture on a large tortilla. Sprinkle the tortilla with the veggie mixture and then roll tightly.
- Cut the tortilla into 1-inch slices and enjoy!
Top Tips
- If you want to add extra flavor, feel free to add 1 tbsp of Ranch dressing mix to the cream cheese mixture.
- Feel free to include cucumbers, bell peppers, and onions!
- If you’re not a fan of sour cream, use mayo instead.
- Make sure to add a very generous amount of cream cheese mixture to each tortilla! It adds so much flavor.
- Serve the roll-ups with any leftover cream cheese mixture.
Can I Make These Ahead Of Time?
These actually taste better the following day so feel free to make them the night before! Just prepare them and cover them in plastic. You can slice them when you’re ready to serve.
