This Cajun fried corn is buttery, packed with flavor, and super easy to make! The perfect side dish for any holiday or busy weeknight meal.

Serve it with Southern fried shrimp and creamy mashed potatoes for a delicious dinner meal.

INGREDIENT NOTES

  • Corn – I like to use fresh corn when it’s in season but if not, frozen corn works perfectly. Avoid canned corn.
  • Butter – Unsalted or salted butter works. If you don’t have butter on hand, use oil or lard.
  • Cajun SeasoningAlthough I used Cajun seasoning, feel free to use chipotle seasoning or the spices of your choice. Both homemade or store-bought Cajun seasoning works well for this recipe.
  • Heavy Cream – Makes it a little bit creamy but not too much.
  • Sugar – I added sugar because I used yellow corn. If you’re using sweet corn, omit the sugar.

TOP TIPS AND RECIPE SUBSTITUTIONS

  • If you don’t have Cajun seasoning on hand, season the corn with your favorite spices.
  • Feel free to include spicy peppers or bell peppers for extra flavor.
  • Serve warm.
  • Start with 1/2 teaspoon of Cajun seasoning and work your way up. Keep in mind that every Cajun seasoning blend is different and some are a lot saltier than others.

STORAGE

If you have any leftovers, allow them to cool completely, then transfer them to an air-tight container and refrigerate for up to 3 days. I don’t recommend freezing the leftovers.

Cajun Fried Corn

Ingredients 

  • 3 cups fresh or frozen corn
  • ½ cup heavy cream
  • 1 teaspoon Cajun seasoning , *check notes*
  • 1 teaspoon granulated sugar , *check notes*
  • ½ tablespoon fresh chives, for garnishing , optional
  • 3 tablespoons butter

Instructions 

  • Melt the butter in a large skillet over high heat. Once it's completely melted add the corn and cook for 3-4 minutes.
  • Stir in the Cajun seasoning and sugar. Cook for an additional 3 minutes. I recommend starting with ½ teaspoon of Cajun seasoning and working your way up.
  • If you're using sweet corn, omit the sugar. Stir in the heavy cream and cook for 1 minute.
  • Check for seasoning, garnish with chives, and enjoy!
