    Easy Garlic Butter Chicken Bites

    • Cooks in under 15 minutes.
    • Low carb and keto-friendly.
    • High in protein.
    • Makes for the best leftovers!

    Ingredient Notes

    • Chicken – I used boneless skinless chicken breasts but boneless chicken thighs work too. However, chicken thighs will take longer to cook. The safe temperature for cooked chicken is 165 degrees F.
    • Garlic – Use fresh!
    • Worcestershire Sauce – Optional, but I highly recommend it.
    • Hot Sauce – Doesn’t have to be a spicy hot sauce, a mild hot sauce will do.
    • Red Crushed Pepper – Optional.
    • Butter – Use good quality unsalted butter.
    Ingredients for chicken bites.

    How To Make

    1. Start by trimming the chicken fat and slicing the chicken into 1-inch cubes.
    2. Melt the butter in a skillet over medium heat. Once the butter melts, add the chicken along with the spices, salt, and pepper. Coat the chicken well.
    3. Cook the chicken for about 2 minutes on each side then stir in the remaining ingredients. Cover and cook for 2-3 minutes or until the chicken is fully cooked through. It shouldn’t take too long.
    4. Stir the chicken and check for seasoning. Garnish with fresh parsley, and enjoy!

    Top Tips

    • I seasoned the chicken with garlic powder, paprika, Italian seasoning, salt, and pepper. Feel free to season the chicken with Cajun seasoning or the spices of your choice.
    • Don’t overcook the chicken!
    • If you want this to be super saucy, feel free to add 1/2 cup of white wine or chicken broth.
    • Allow the chicken to rest at room temperature for at least 20 minutes before cooking.
    • Serve with white rice, quinoa, or creamy mashed potatoes.
    • Add some veggies like mushrooms, spinach, or bell peppers to switch it up.

    Can I Bake This Instead?

Yes, preheat your oven to 400 degrees f. and line a baking sheet with parchment paper. Place the chicken on the prepared baking sheet and bake for 12-15 minutes. Keep in mind that the chicken bites will cook a lot quicker on the stovetop.

    Storage

Place any leftovers in an air-tight container and refrigerate for up to 3 days. To reheat, place the chicken in a skillet and cook until warm.
