    Keto Cajun Chicken Taquitos

    These keto cajun chicken taquitos are made with just three ingredients! Enjoy these as a snack, appetizer, or main entree. Dip these in some keto-friendly dipping sauces like sugar-free barbecue sauce or ranch dressing.

    Juicy and seasoned to perfection chicken breast shredded and rolled in a melted mozzarella cheese slice. Does that sound good or what?

    I seasoned the chicken breast with homemade cajun seasoning but feel free to use store-bought cajun seasoning. Although you may certainly use store-bought rotisserie chicken.

    However, if you’re trying to eat better I would highly recommend cooking more often at home. I prefer making my own chicken and seasonings because I know exactly what’s going into it.

    Mozzarella cheese slices are perfect for this recipe but cheddar cheese works as well.

    Why These Keto Cajun Chicken Taquitos Are So Good

    Ingredient’s You’ll Need

    • Chicken
    • Mozzarella Cheese
    • Cajun Seasoning

    How To Make Keto Cajun Chicken Taquitos

    1. Preheat oven to 400 degrees F.
    2. Season the chicken with cajun seasoning on one side and cook for 5-6 minutes in a skillet with oil over medium-high heat. Make sure not to overcook the chicken. The internal cooking temperature should reach 165 degrees F. Dice or shred the chicken into bite-sized pieces.
    3. Line a baking sheet with a silicone mat and place the mozzarella slices on the baking sheet. Bake for 6 minutes or until the cheese melts completely.
    4. Let the mozzarella cheese slices cool for a bit. Add about 1 tbsp of chicken to each cheese slice and then roll it lengthwise.

    Top Tips: 

    • Do not overcook the chicken. The cajun seasoning will give it plenty of color so it will look overcooked on the outside but as long as you don’t cook it over 165 degrees it should be juicy and moist on the inside.
    • Only season one side of the chicken because the mozzarella cheese is salty. Seasoning both sides of the chicken will make things a bit too salty.

    Ingredients

    • 12 mozzarella cheese slices
    • 1/2 lb chicken breast
    • 1/4 tsp Cajun seasoning

    Instructions

    • Preheat oven to 400 degrees F.
    • Season the chicken with Cajun seasoning on one side. Cook the chicken in a skillet over medium-high heat with oil. Cook for 5-6 minutes or until fully cooked through.
    • Shred or dice the chicken into bite-sized pieces.
    • Line a baking sheet with a silicone mat. Place the mozzarella slices on the baking sheet. Bake for 6 minutes or until the cheese is completely melted.
    • Let the cheese cool for 1-2 minutes. Add 1 tbsp of chicken to each cheese slice and then roll them up.
