    Ultimate Chicken Salad

    This ultimate chicken salad is loaded with cranberries, shallots, and dill. Make ahead and serve this on fresh lettuce, bread, or crackers!

    Chicken Salad Sandwiches are perfect for picnics or a quick lunch. You can’t go wrong whether you serve it on soft whole grain bread or onion rolls. I prefer my chicken salad cold, creamy, and made with diced white chicken breast. 

    I used store-bought rotisserie chicken because it saves so much time and my local supermarket makes a very delicious chicken.

    Although this takes about 10 minutes to make it is still a filling meal that’s packed with flavor. Just cause it’s easy and simple to make doesn’t mean it’s bland and boring.

    The easiest recipes are sometimes the best recipes. As long as you use fresh and delicious ingredients, you’re good to go. Want to shred your chicken instead of dicing it? Here’s a great article that shows you exactly how to shred chicken.

    Ingredients You’ll Need for Chicken Salad: 

    • 2 cups of cooked chicken (diced or shredded)
    • 1/4 cup cranberries
    • 1 small shallot finely diced
    • 1/2 cup mayo
    • 1 tsp dijon mustard
    • 1 tsp fresh lemon juice
    • 2 tsp fresh dill
    • salt and pepper to taste

    How to Make Chicken Salad 

    Making chicken salad is super easy, here’s all you have to do:

    1. Dice 2 cups of chicken into cubes and place it in a large bowl.
    2. Add the remaining ingredients and mix until well combined.
    3. Season with salt and pepper to taste.

    Mix until well combined and creamy. Not a fan of dijon mustard? Add a splash of vinegar instead.

    Substitute for Celery in Chicken Salad

    I’m not a huge fan of celery so I prefer to use fresh shallots. You can also use chives, scallions, or grated apples to give it some extra crunch.

     

    How Can I Make This Low Carb or Keto Friendly? 

    • Omit the dried cranberries.
    • Serve this on lettuce wraps instead of bread.

     

    How Long Does Chicken Salad Last?

    Place it in an air-tight container and refrigerate for 3-5 days.

     

     

    Cook’s Tips for the Ultimate Chicken Salad: 

    • Use store-bought rotisserie chicken to save you some time. Remove the skin and then dice or shred the chicken. 
    • If the store-bought chicken is a little too bland, add some spices. Granulated garlic, chili powder, onion powder, etc.
    • 1/2 cup of mayo for 2 cups of chicken is the perfect ratio but feel free to add more if you like it extra creamy.
    • Add some grated carrots and grapes if you like it sweet.

    Once refrigerated, leftovers should be eaten within 5 days.

    A creamy and delicious rotisserie chicken salad loaded with cranberries, shallots, and dill. Made in under 10 minutes! 

    Ingredients

    • 2 cups cooked chicken
    • 1/4 cup dried cranberries
    • 1 small shallot
    • 1/2 cup mayo
    • 1 tsp dijon mustard
    • 1 tsp fresh lemon juice
    • 2 tsp fresh dill
    • salt and pepper to taste

    Instructions

    • Chop or shred the cooked chicken. 
    • In a large bowl, combine the shallots, dried cranberries, mayo, dill, dijon mustard, lemon juice, and cooked chicken. Mix until well combined. 
    • Season with salt and pepper to taste. Enjoy!
