These delicious crispy chicken cutlets are thinly sliced and coated with a mixture of breadcrumbs and parmesan cheese for a crispy skillet chicken breast. Serve it plain or add it to your favorite pasta or salad to add texture, flavor, and crunch!

I like serving it with comforting side dishes like creamy mashed potatoes or on top of a warm heap of yellow rice with corn.

A chicken cutlet is nothing more than thinly sliced chicken breast. But, when you coat it with a mixture of breadcrumbs and parmesan cheese, it transforms it into a delicious crunchy chicken that can be used in so many different ways.

Ingredients You’ll Need

  • Thinly Sliced Chicken Breasts – Depending on the size of the chicken breast, they may need to be pounded thinner using a meat tenderizer.
  • Whole Milk – This is mixed with the eggs to create a coating that the dry ingredients will stick to. 
  • Italian Seasoning – Adds a range of Italian flavors to the breadcrumbs. 
  • Granulated Garlic – Pairs well with chicken and Italian seasoning. 
  • Eggs – Helps the breadcrumbs stick to the chicken and forms a nice crust.

How To Make 

  1. In a large dish, combine the plain breadcrumbs, parmesan cheese, parsley, Italian seasoning, salt, and granulated garlic. 
  2. Whisk 2 eggs and 2 tbsp milk in a separate dish. 
  3. Season the chicken on both sides with salt and pepper. 
  4. Coat the chicken in the all-purpose flour, shaking off any excess. Then dip it into the milk and egg mixture and finally coat it in the bread crumb mixture
  5. Fry in vegetable oil over medium-high heat for 2-3 minutes on each side until chicken is cooked through. 
  6. Serve with lemon wedges and enjoy.

Recipe Tips For The Ultimate Crispy Chicken Cutlets

  • Make sure you use an oil that has a high smoke point to pan-fry the chicken. Vegetable oil or canola is best!
  • Chicken cutlets should all roughly be the same size to make sure they cook evenly in the pan. 
  • You may need to cook the chicken in batches depending on the size of your skillet. Add more oil as necessary. Do not overcrowd the pan! 
  • Store-bought breadcrumbs range in flavor so be sure to adjust your seasonings as necessary. Although, I highly recommend plain bread crumbs. 
  • It’s best to cook chicken that has been sitting at room temperature for 10-15 minutes. Taking the chill off will keep it from getting tough.

Variations

  • Try using thinly sliced chicken thighs or chicken tenderloins if you prefer. 
  • Make them a bit spicy by adding a pinch of cayenne pepper to the dry mixture. 
  • They can be baked in the oven at 400F for about 15-20 minutes flipping halfway. 
  • Cut the cutlets into bite-sized pieces for crispy chicken nuggets. 


Storing & Freezing

  • Storing: Cooked and cooled chicken cutlets can be stored in an airtight container in the fridge for up to 5 days.
  • Freezing: To freeze chicken cutlets, place them on a sheet pan in a single layer and freeze for 4 hours. Then add them to a freezer-safe bag or airtight container for up to 3 months. Thaw in the fridge overnight and reheat in the oven or over medium heat in a skillet.

What Is The Difference Between Chicken Cutlets And Chicken Tenders?

Chicken cutlets are thin-sliced chicken breasts while chicken tenders are larger, thicker cuts of chicken breast meat that are on the part of a chicken that produces a more tender meat.

How Do You Know When Chicken Cutlets Are Fully Cooked?

Chicken cutlets are fully cooked when they have an internal temperature of 165 °F. Use a meat thermometer for better accuracy. 

How Do I Keep The Chicken Crispy? 

After the chicken is fully cooked, make sure you drain off as much oil as possible to keep the breading from getting soggy. Also, make sure the oil is at 350 degrees F.

Ingredients 

  • 4 thinly sliced chicken breasts, pounded if needed
  • 2 tbsp whole milk
  • 1 tsp Italian seasoning
