Chorizo is a type of sausage that is sealed in a casing. For this recipe, I used Mexican chorizo which is uncooked ground pork sausage.

- Potato Sticks – You can use any ingredient that has crunch! Think fried shallots or crumbled potato chips. However, I highly recommend using potato sticks for this recipe.
- Goat Cheese – Plain goat cheese was used for this recipe but feel free to use any type of cheese. Queso fresco and cotija works too!
- Chorizo – I removed it from the casing and cooked it for about 10 minutes.
- Tortillas – I used corn tortillas but feel free to use flour tortillas.
- Chipotle Peppers in Adobo Sauce – Deseeded and finely chopped.
Step-By-Step Instructions
- Remove the chorizo from its casing and set it aside.
- Heat a large skillet over medium-high heat. Add the chorizo to the skillet and break it up using a wooden spoon or meat masher.
- Cook the chorizo for 8 minutes while stirring frequently. Add the fresh garlic and chipotle peppers and cook for an additional 2 minutes. Check for seasoning and add salt if needed.
- Grill some tortillas on the stovetop and top them off with a generous amount of chorizo. Top each taco off with onions, cilantro, potato sticks, and goat cheese.
- Serve with fresh lime and enjoy!
